Color Variability for a Wine Sample Poured Into a Standard Glass Wine Sampler

چکیده
Spectroradiometric color measurements were performed at 26 regularly spaced points of a standard wine sampler into which 100 cc of wine were poured. Our goal is to describe the color changes occurring in this system, but not to propose a new method for wine-color measurement. Three samples of three different wines (red, rosé and white) were studied. From experimental measurements, lines of constant lightness (L*10), chroma (C*ab,10) and hue-angle (hab,10) were plotted for each wine poured into the wine sampler, as well as lines of constant CIELAB color differences ( E*ab,10), with respect to a reference point placed at the axis of the wine sampler and at the zone with the greatest diameter. Considering different points of the wine sampler, the color attribute undergoing the greatest change was lightness ( L*10 about 16.0, 15.0 and 11.0 for the red, rosé and white wines, respectively), followed by chroma ( C*ab,10 about 2.8, 3.8 and 2.6 for the red, rosé and white wines, respectively) and hue ( H*ab,10 lower than 1.0 for all the wines). Lightness variations were related mainly to the thickness differences between various zones of the wine sampler. Large color differences were found among the different points of the wine poured into the wine sampler (about 20.0, 21.0 and 14.0 CIELAB units, for the red, rosé and white wines, respectively). Panels should be aware of these large color variations when wine is visually assessed using standard wine samplers. It should be concluded that a single color specification for a wine poured into a wine sampler gives incomplete information, but hue, which is the main color attribute considered by observers, is nearly constant in the wine sampler. © 2003 Wiley Periodicals, Inc. Actual and Perceived Units of Alcohol in a Self-Defined “Usual Glass” of Alcoholic Drinks in England
BACKGROUND Several studies have found participants pour more than 1 standard drink or unit as their usual glass. This is the first study to measure actual and perceived amounts of alcohol in a self-defined usual glass of wines and spirits in the general population. METHODS Participants were a convenience sample of adults who drink alcohol or who pour drinks for other people (n = 283, 54% wome...

INTRODUCTION AND AIMS To investigate the average self-reported size of a self-poured glass of wine for Australians aged 16 and over. DESIGN AND METHODS Cross-sectional survey data were taken from the first wave of the Australian arm of the International Alcohol Control study administered to 2020 Australians aged 16 and over with an oversampling of heavy drinkers. Respondents were asked about ...
متن کاملDoes wine glass size influence sales for on-site consumption? A multiple treatment reversal design
BACKGROUND Wine glass size can influence both perceptions of portion size and the amount poured, but its impact upon purchasing and consumption is unknown. This study aimed to examine the impact of wine glass size on wine sales for on-site consumption, keeping portion size constant. METHODS In one establishment (with separate bar and restaurant areas) in Cambridge, England, wine glass size (S...
متن کاملInfluence of Temperature on the Bleaching Efficacy of Hydrogen Peroxide
Aim: The aim of this study was to evaluate the influence of temperature on the bleaching efficacy of hydrogen peroxide on chromogenic solutions from wine and tobacco. Methods: Inside optical glass cuvette, equal amounts of chromogenic solution (wine or tobacco), hydrogen peroxide 60% and ultra-pure water were mixed. Initial color readings were performed with a reflectance spectrophotometer imme...
متن کاملEffervescence in a glass of champagne: A bubble story
People have long been fascinated by bubbles and foams dynamics, and since the pioneer work of Leonardo da Vinci in the early 16th century, this subject has generated a huge bibliography. However, only very recently, much interest was devoted to bubbles in champagne wines [1]. Small bubbles rising through the liquid, as well as a bubble ring (the so-called collar) at the periphery of a flute pou...
